The production of gingerbread cookies began to be pursued alongside his wife Jane Girgoskova, who turned traditional Christmas baking into a livelihood over the years. As a graduate of communal dining, he was not far from this production area, so their business quickly took off very well. For a while, they operated a small shop in Nové Zámky, but as large orders from companies began to come in, they closed the shop and switched to custom production only. Gradually, they added participation in fairs and exhibitions, and currently they are active only in this field – they have abandoned large orders, produce on a smaller scale, sell everything at craft fairs and folklore festivals during the summer, and in winter they engage in different work abroad.
Certainly, people are attracted to their gingerbread cookies by the unique recipe from the wife’s grandmother from Markušovce, who brought it from her native Dobšiná. People’s reactions to the events where they present themselves give them strength for further production – during the work week, they focus on baking and decorating, and on weekends they sell at fairs.
Peter Girgosko in the marital production tandem focuses on the physically demanding preparation of the dough and baking. However, when it’s necessary to make a larger amount of gingerbread cookies, he also takes care of the decorating. He cuts out the gingerbread cookies using forms made of galvanized sheet metal, which he makes himself. The designs – from traditional to current humorous ones – are adapted to the occasion. In addition to cut-out gingerbread cookies, the Girgosko couple also make spatial gingerbread cookies. They use a different kind of dough for them, which compared to the classic one can be rolled out thicker and does not become soft during baking.
